Day 1
This last December I started having gallbladder attacks. After much research of foods, I decided to go to a low/no fat, low/no sugar, no diary diet for 30 days.
At first I was upset. I love foods that I shouldn’t have. However, I’m changing my mindset on this. I want to find a way to make my foods tasty.

So, I’m embarking on a food journey. This is my journal. I’ll list my foods daily, my recipes, and my struggles.
Day 1

Lunch
Spring mix with pecans, shredded carrots, pinch of zaatar, sprinkle of turmeric, Redmond sea salt, course ground pepper, and half a lime squeezed over for dressing. Probably one of the least appetizing looking salads I’ve ever made.
This was actually pretty good. I’d like some cucumber and radish in it at some point as well. Minimal discomfort after eating it.
Dinner
Not much.
Sooonful of beans - dull chest and shoulder pain 10 min later
2 Oz of cashews and almonds
12 Oz black coffee
Not increased discomfort
I’m finding that I don’t really have an issue with cutting sugar as much as I do dairy. I cried some because I’m so hungry and I really just want cheese.
Let’s see if tomorrow is better and I can plan a meal for myself.
